Green Chutney
 

Ingredients Recipes

No cooking time
Makes one cup of chutney

Ingredients:

  • 1 cup of chopped coriander leaves
  • 4 chillies, cut small
  • 2 tablespoons roasted groundnuts – or roasted chana
  • 1 teaspoon lemon juice
  • ½ teaspoon sugar
  • ½ teaspoon salt
  • ½ teaspoon cumin seeds

Method

  • mix all above ingredients in a blender or liquidizer, blend till smooth paste

Use with dhokla, muthia, savouries
 

 
 
Fudina (mint) Chutney
 
 
 
  • If you want to make mint chutney take ½ cup of mint leaves (chopped) and ½ cup of coriander leaves (chopped)
  • the rest of the recipe remains the same as for Green Chutney.
   
 

Dates/Tamarind Chutney

(Khajur / Amli)
 
 
 

Preparation time: 5 mins
Making time: 10 mins
Makes one cup of chutney

Ingredients:

  • 25 gm tamarind
  • 30 gm dates
  • 4 teaspoons sugar or jaggery
  • ½ teaspoon chilli powder, ½ teaspoon cumin powder
  • ¼ teaspoon salt

Method:

  • wash tamarind and dates and remove the seeds
  • in a container put tamarind, dates, sugar, salt and 1½ cup of water. Then boil for 5 mins
  • mix in a blender and strain out
  • add chilli powder and cumin powder

A cup of chutney is ready

 
 
 
Green Curd Chutney
 
 
 

Preparation time: 5 mins
Making time: 5 mins
No cooking needed
Makes 1 cup of chutney

Ingredients:

  • 1 cup beaten curd
  • ½ cup of corriander leaves chopped
  • 4 chillies cut small
  • ¼ teaspoon of salt

Method:

  • with a little water blend coriander leaves and chillies to make into a paste
  • add this mixture to the curd
  • add salt and mix well

Serve with savouries

 
 
 
Tomato Chutney
 
 
 

Preparation time: 5 mins
Making time: 5 mins
Makes 1 cup of chutney

Ingredients:

  • 4 tomatoes of average size
  • ½ teaspoon chillie powder
  • ½ teaspoon cumin powder
  • 2 teaspoons sugar
  • ¼ teaspoon salt

Method:

  • mix all the ingredients in a blender
  • put the blended paste in a saucepan to boil so that all the excess water evaporates and you are left with thick paste

A cup of chutney is ready

 
 
 
Curd Chutney

 
 
 
  • In a cup of blended curd
  • Add ¼ teaspoon salt and ½ teaspoon chilli powder
  • mix well

Can be used with savouries

 
 
 
Masala Oil Chutney

 
 
 
  • In a half cup of refined oil add some salt and ½ tea spoon of chilli powder
  • Mix well

Can be used with dhoklas
